How to Save Time & Money and Go Plant-Based on a Budget with Toni Okamoto, Maya Kaimal and Leslie Durso

Three of the myths we often hear about going plant-based are that it is time-consuming, expensive and difficult. So today we have three plant-powered pioneers in the plant-based space who are busting every single one of those myths and teaching us how easy, affordable and fun it is to eat a vegan diet.

First up is Toni Okamoto, author of Plant‑Based on a Budget: Delicious Vegan Recipes for Under $30 a Week who is here to share her tips and knowledge on making delicious plant-based food easy and affordable.

Then Alli and Suzy are talking to Maya Kaimal, Founder and Chief Creative Officer of Maya Kaimal Foods and winner of the Julia Child Award for her cookbook Curried Favors, Family Recipes from South India to learn more about plant-based Indian cuisine.

And finally, Alli sits down with Food Heals favorite Leslie Durso, who is currently the vegan chef at the Four Seasons Punta Mita and the Four Seasons Santa Barbara to hear her plant-powered tips and advice for making vegan easy and not compromising style for sustainability.

Toni Okamoto is the founder of Plant-Based on a Budget, the popular website and meal plan that shows you how to save dough by eating veggies. She’s also author of The Super Easy Vegan Slow Cooker Cookbook, Plant‑Based on a Budget: Delicious Vegan Recipes for Under $30 a Week and is the co-host of The Plant-Powered People Podcast. Plant-Based on a Budget has been featured in NBC News, US News and World Report, and more. Toni’s also a regular presence on the FOX affiliate in Sacramento, where she teaches viewers how to break their meat habit without breaking their budget, and was featured in the popular documentary What the Health. Toni is a burrito enthusiast and spends her free time swing dancing across the county.

Maya Kaimal is the founder of Maya Kaimal Foods, winner of the Julia Child Award for her cookbook Curried Favors: Family Recipes from South India, and former photo editor of Saveur magazine. Raised by two talented cooks–an American mother and Indian father–Maya’s father’s roots in Kerala have been a source of inspiration for her. She has written extensively about South Indian cuisine in magazines and cookbooks. In 2003, she and her husband launched her line of Indian products from their Brooklyn apartment. Her goal was to use quality ingredients and home-cooked methods to make it easy for consumers to experience delicious, regional Indian flavors at home, and her products are now available in over 7000 stores nationwide.

A vegan chef and wellness expert, Leslie is the glowing face of a fresher plant-based movement that refuses to compromise style for sustainability. Walking the plant-based talk since age eight, this Southern California native has always been well ahead of the times with her meatless mindset. She works as a consulting chef for hotels, resorts, and restaurants around the world and is currently the vegan chef at the Four Seasons Resort, Punta Mita, Mexico and the Four Seasons Resort, The Biltmore, Santa Barbara. Once simply known as Leslie the lab girl with Bill Nye the science guy, Leslie took her love of education and shifted from science to plant-based food. She regularly appears on The Doctors, Food Network, Discovery Channel, Hallmark Channel, and has written for VegNews,, Redbook, Glamour, and more, evangelizing the benefits of a mindful lifestyle, delivered with her trademark blend of sunshine-y sophistication and girl-next-door relatability.

I can’t wait to share with you more about this female-founded company that’s truly taking a modern approach to feminine care. They offer a line of organic tampons, pads and liners, as well as all-natural cleansing wipes and essential oils.

Here’s the story. The founders, Jordana and Alex, started LOLA with a simple question…

Shouldn’t you care about your feminine care products in the same way you care about what goes into the food you eat and the beauty products you apply?

A simple, but powerful, idea was born. It’s also a message I can totally get behind! Making sure whatever we put into our bodies is organic is top priority on the Food Heals podcast. Honestly, after LOLA, I don’t ever want to think about those drugstore tampons (and whatever toxins could be absorbing into our bodies) again!

And now you don’t have to. LOLA offers complete transparency about their all-natural ingredients used to make their feminine care products. LOLA also gives back, donating their products to homeless shelters across the United States.

Because you’re a listener, LOLA is offering 30% off the first month’s subscription. Just go to and enter the promo code FOOD HEALS.
